How to make Japanese milk bread

Mix together the flour and wet ingredients and let the dough sit for 20 - 30 minutes. The flour will absorb water, naturally develop gluten, and be easier to handle during kneading.


Add the remaining ingredients using the fraisage method - push the dough, salt, sugar, and butter out in small increments, so it’s smeared out thinly. Then gather everything back to the center and repeat.


The dough is soft and sticky, so it’s hard to knead by pushing and pulling. Use the slap & fold method instead - lift up the dough in one hand and slap it down on the countertop.
