How to make tangzhong brioche bread

This fluffy brioche is made using the tangzhong method to give it a beautiful, light texture that stays soft for days. 

In small skillet or pot, whisk together flour and milk until smooth. Bring to simmer over medium-low heat, whisking frequently, until mixture has thickened but is still pourable. 

Make the tang zhong

Add the tangzhong to your mixing bowl while still warm, but not hot to the touch. Add the sugar and yeast. Mix in flour, eggs, egg yolk, salt, and butter.

Make the dough

Knead and rest

Knead for 15 - 20 min and let rise for 2 hours. Then, place in fridge and let rise for 8 hours to help develop flavor.

Shape into a braided loaf and let rise for 2 more hours. Bake at 400F for 10 min. Then, reduce to 350F and bake for 20 more min.
