Strawberry mochi muffins

These mini strawberry mochi muffins are chewy and fluffy with juicy chunks of strawberry. They make the cutest bite-sized snacks!

Ingredients
  

  • 1/2 cup (100g) all purpose flour
  • 1/2 cup (65g) glutinous rice flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup (100g) brown sugar
  • 2 tbsp (30g) unsalted butter, melted
  • 1/2 tsp vanilla extract
  • 3/4 cup + 1 tbsp (200g) milk
  • 3 medium strawberries, finely diced
  • food coloring (optional)

Instructions
 

  • Preheat your oven to 350°F and grease a mini muffin tin
  • Prepare your dry ingredients. In a bowl, add all purpose flour, glutinous rice flour, baking powder, and salt. Mix together and then set aside.
  • Prepare your wet ingredients. In a separate bowl, mix together the egg and brown sugar. Add the unsalted butter, vanilla extract, and milk and mix until combined.
  • Add the dry ingredients to the wet ingredients and mix until combined. Fold in the diced strawberries. The batter should be fairly thin. If desired, add a drop of red or pink food coloring.
  • Fill your muffin tin and place in the middle rack of the oven. Bake for 15 - 17 minutes until a toothpick comes out clean. Remove from the tin and enjoy!

Notes

  1. You can use light brown or dark brown sugar
  2. You can use any type of milk or milk substitute
