I’ve been wanting to make a croissantembouche for some time, and there was no better excuse than my birthday. I had my friends over for dinner and the croissantembouche was the grand finale. I’m feeling so much gratitude as I head into this new year 🥰

Some notes:
	⁃	Always fold the parchment paper before putting the butter down
	⁃	You can beat the butter with a rolling pin instead of putting it out at room temperature 
	⁃	I am using @plugrabutter. I have also successfully used @kerrygoldusa
