When it’s 10 am on a Sunday, with a brunch get together at 11 am, you need to pull together something quick and delicious! These simple muffins are gently sprinkled with cinnamon and sugar and are a huge crowd pleaser. Fresh baked goods are great at making everyone think you devoted hours of time… when really these muffins take about 30 minutes to make 🙂
These muffins have a light flavor that can be spiced up with some chocolate chips or blueberries. Or you can simply enjoy the cinnamon sugar version 🙂

Simple Cinnamon Muffins
Servings: 12 standard muffins
Time: 30 minutes
Ingredients
For muffin batter:
2 cups all-purpose flour
1/2 cup granulated sugar
1 tbsp baking power
1/2 tsp salt
1 1/4 cup milk of your choice
1 tsp vanilla extract
1 large egg
1/3 cup canola oil
1 tbsp cinnamon
For topping:
1 tsp cinnamon
1 tbsp white granulated sugar
1 tbsp brown sugar
Directions
- Preheat oven to 400 degrees F
- Whisk together the egg, oil, milk, vanilla extract, and sugar
- In a separate large mixing bowl, mix together the flour, salt, cinnamon, and baking powder
- Prepare topping – mix cinnamon, white sugar, and brown sugar in a small bowl. Set aside.
- Form a well in your dry ingredients and pour in your wet ingredients. Gently mix to combine, being careful not to overmix
- Fill a standard muffin tin about 3/4 full with batter
- Generously sprinkle cinnamon sugar topping over each muffin until the top is covered
- Place muffins in oven for 18 minutes, until a toothpick comes out clean
